I like raithas. Not only for their taste, but also because of the ease of preparation. Lesser Ingredients, lesser preparation time and a tasty side dish will be ready. Many Vegetables including the leafy vegetable can be used for making raitha. We just have to work a bit on the combinations. Now a days I am slowly trying out my own inventions in making Raithas J.

Amaranth Stem raitha is prepared after separating out the Amaranth Leaves. The leaves are used to prepare dal, chutney and curry. A part of the Stems are also included in all these. The Stem part of the amaranth Leaves is highly rich in fibre contents. The reason for choosing the amaranth leaves stem is they are little juicy and bulky compared to other vegetables. Ingredients
  1. Amaranth Stem chopped : ¾ cup
  2. Green Chillies : 1 or 2 depending upon desired spice levels
  3. Roasted Peanut Powder : 1.5 tbsp.
  4. Thick Curd : 1.5 cups
  5. Salt : To taste
  6. For Seasoning
  7. Bengal Gram : ½ spoon
  8. Mustard and cumin Seeds : ½ spoon each
  9. Asafoetida : 1 pinch
  10. Curry Leaves : Few
Instructions
  1. Wash the Amaranth Stems and wipe them dry. Chop them into small pieces
  2. Heat Oil in a skilled and add in Bengal Gram once the oil is sufficiently hot
  3. After few seconds add in mustard and cumin seeds to crackle
  4. Add in asafoetida and curry leaves
  5. Now add finely sliced green chillies and fry for a minute
  6. Add in the chopped amaranth stems and sauté until soft
  7. Add in Salt, Roasted peanut powder, mix well and switch off the stove
  8. Allow this mixture to cool
  9. Once it attains room temperature add in the curd and mix well
  10. Serve raitha with rice or roti.

Method:

Heat Oil in a skilled and add in Bengal Gram once the oil is sufficiently hot

After few seconds add in mustard and cumin seeds to crackle
