Gooseberries are called Amla in Hindi. They are a very rich source of Vitamin “C”. Helps a lot in hair growth. Vitamin “C” helps in dealing with many skin allergies. I always like eating  Gooseberries with salt and followed by drinking some water for that tickling sweet taste J. I know many of you out there would have also done this J.

Coming to the Recipes, Gooseberries pickle is the most talked about and followed by chutneys.

Amla Rice is a simple and easy lunch box recipe. Amla fried along with other tempering ingredients and mixed with spices. The whole mixture is then mixed with either freshly cooked or left over rice served along with Papad and Raitha.

I referred Chitra Vishwanathan’s Askchitvish app for Amla Rice recipe and made small changes by adding few more spices. I used Basmati Rice. You can also use ordinary variety of Rice.

Ingredients:

Fresh Amla (Gooseberries): 5-6

Fenugreek Seeds:  ½ spoon

Red Chillies: 3-4

Green Chillies : 2

Grated Coconut : ½ cup

Cooked Rice:  2 Cups

Salt: As per taste

For Tempering :

Black Gram and Bengal Gram: One spoon each

Turmeric Powder: A pinch

Asafoetida: A pinch

Curry Leaves: Few

Oil: 2 tsp

Method:

Amla Rice-Collage

  • Wash and wipe the Gooseberries well and dice them into small pieces and keep it aside.
  • Heat few drops of Oil in a pan and add Fenugreek Seeds and fry for a minute and then add red chillies.
  • Transfer this into a mixer jar and make a coarse paste
  • Pour the remaining oil in a pan and add Bengal Gram and Black Gram and fry for a minute
  • Add turmeric and asafoetida followed by  Curry Leaves and Green chillies
  • Once all the ingredients are fried well add in the ground mixture and fry for another two minutes
  • Now add in the chopped Gooseberries and mix well.
  • Fry untill the Gooseberry pieces turn soft
  • Now add in the cooked rice and salt and mix well
  • Simmer this rice for 5 mins
  • Finally add in Grated coconut, mix well and switch off the stove.
  • Serve hot Amla Rice with papad and raitha or pack it for the lunch box
