Andhra Tomato Pickle- Instant and Easy

Pickles are must and should in my meal. Andhra Tomato Pickle is almost regular in my house. My mom prepares it exclusively for me J. Andhra Tomato Pickle is such a delight.

Andhra Tomato Pickle is made in many varieties. One, with the Sun Dried Tomatoes, Two- By frying the tomatoes and three- The instant one.

Try this Instant version of Andhra Tomato Pickle in which Sautéed Tomatoes are mixed with spice powders that are used in pickles.

Ingredients:

Fresh Ripe Tomatoes : 4

Tamarind : Gooseberry size

Roasted Fenugreek Powder (Methi Powder) : ½ spoon

Roasted Mustard Powder: 1.5 Spoons

Chilli powder: 2 Spoons

Rock Salt : 2.5 Spoons

Oil: 2 spoons

Mustard and Cumin Seeds: 1 Spoon each

Turmeric Powder: A pinch

Asafoetida: A pinch

Curry Leaves: Few

Red chillies : 2

Andhra Tomato Pickle

Method:

  • Heat Oil in a pan and once hot add in mustard and cumin seeds to splutter.
  • Now add in Turmeric Powder, Asafoetida, Curry Leaves and Red chillies
  • Transfer the chopped tomatoes into the pot, Rock Salt and mix well
  • Allow the tomatoes to cook in its own juices and cook until soft
  • Extract the pulp out of Tamarind and add it to the tomatoes and cook it for 2-3 mins
  • Now add the Spice powder and mix well.
  • Cook  for 3-4 mins or when you see the oil separating at the edges.

  • Switch off the stove and serve it as a Pickle for any meal/Breakfast.
