Now I would curse myself if I don’t post this recipe in my Pickles Segment. Avakai Pickle Recipe is an integral part of life in many South Indian Families. If it’s summer then there is more craze for new pickle made.

While elders are busy with marinating the mango, preparation of spices, kids get engaged in stealing the marinated mangoes for that salty and tangy bite. I am not an exception.  Some even go to extent of rubbing mustard powder to mango and eat which gives a very strong flavour. On the other  hand children are kept away while pickling is happening to avoid spilling and prevent falling of chilli powder into the eyes.

Avakai Pickle Recipe process starts with the selection good variety of mangoes by which I mean which are sour and harder. It is then cut into the large chunks by the shop keeper itself. He takes cutting charges on per mango basis and will take up chopping work only when Mangoes are bought in bulk. After all this the season in which they can earn well.

The next step in Avakai Pickle recipe is selection and preparation of spices. Pickling ingredients like mustard and Fenugreek seeds are carefully selected and then dry roasted and made into a very powder. So does it happens for salt and chilli powder too.

Then the cut mangoes are cleaned, dried and then pickle and the resultant is delicious Avakai Pickle recipe.

Ingredients
  1. Sour and Hard Mangoes : 8 – 10
  2. Mustard Powder : 1 cup
  3. Fenugreek Powder : ¼ cup (optional)
  4. Red Chilli powder : 1 Cup
  5. Salt : 1 cup or according to taste
  6. Fenugreek (Methi) Seeds : 3 tbsp.
  7. Asafoetida and turmeric powder : ¼ tbsp. each.
  8. Gingili oil : 2.5 cups
Instructions
  1. Remove the paper like layer on the mango chunks that are stuck to the harder portion inside after removing the pith.
  2. Wipe them with a clean towel and spread the pieces on a big tray to dry.
  3. When the mango pieces are ready take all the powders, fenugreek seeds in a big mixing bowl and mix well. Take one cup of Oil in another bowl.
  4. Now pick few mango pieces, dip them in oil and then drop them in the bowl of powders and mix well until every piece is well coated with the masala.
  5. Transfer them into the container.
  6. Repeat this process by picking handful of mango pieces each time until you are done with all of them.
  7. Finally pour the remaining oil into the container along with the left out masala powder if any and mix well.
  8. Allow the pickle to marinate for three days.
  9. On the third day again give a nice stir to the pickle and check for salt and spice levels and adjust accordingly. You can even add oil if you feel it’s less.
  10. Delicious Avakai Pickle Recipe is ready to be served.
Notes
  1. The reason for dipping the mango pieces in oil beforehand is that it helps in maintaining the crunchiness of the mango for a longer time.
  2. Always use a clean dry spoon to serve to prevent the pickle from spoiling.
