Besan Kadhi is one of my favourite main course dish. Kadhi is a Hindi word. It is called Mor Kuzhambu (Tamil), Majjiga Pulusu (Telugu), Majjige Huli (Kannada) which means Curd/Buttermilk based Gravy dish.

Being a South Indian I first like the variety of Besan Kadhi that is prepared in Andhra. Tamil Nadu and Karnataka. I then like the Punjabi style Besan Kadhi and Kadhi Pakora. For today I am going to present a traditional South Indian Besan Kadhi.

Besan Kadhi is one of my favourite main course dish. Kadhi is a Hindi word. It is called Mor Kuzhambu (Tamil), Majjiga Pulusu (Telugu), Majjige Huli (Kannada) which means Curd/Buttermilk based Gravy dish.

Besan Kadhi is sometimes prepared on festivals in my house. Dad used to drop few Vadas in Besan Kadhi as it tastes so yummy when it absorbs the gravy. Apart from preparing on festival Days mom makes this at least Bi-Weekly. It’s her favourite.

Besan Kadhi can be prepared with variety of vegetables Ash Gourd, Chow-Chow, Brinjal, Bhendi, etc. Kadhi made of Ash Gourd and Bhendi (Okra) tastes best. This kadhi should not be confused with another curd based gravy dish that is Avial which is quite popular in Tamil Nadu and Kerala. In Avial many vegetables (Hard Ones and Root Vegetables) will be added and gram flour is not used. Moreover it is thicker than Kadhi. For the Paste
  1. Fresh Grated Coconut : 1 cup
  2. Green Chillies: 3-4
  3. Ginger - 1.5 inch
  4. Cumin Seeds : 1/2 spoon
  5. Coriander Seeds : 1/2 spoon
  6. Pepper Corns: 4-5
  7. Salt: To taste
  8. Turmeric and Asafoetida : A pinch each
For the Gravy
  1. Medium Sized Ash gourd Cubes : 2 Cups
  2. Sour Curd : 1.5 cups
  3. Gram Flour (Besan) : 1.5 tsp.
  4. Curry Leaves : A few
  5. water: 1.5 cups
  6. For Tempering
  7. Mustard and Cumin Seeds : 1 spoon each
  8. Asafoetida: 1/4 spoon
  9. Broken Red Chillies : 2
Instructions
  1. In a deep bottomed vessel, boil the Ash gourd Cubes with sufficient water until they are 75% Done. Alternatively you can pressure cook them for 2 whistles.
  2. Grind all the ingredients given under the paste to a coarse or fine paste adding water little by little.
  3. Now transfer this paste in a cooking vessel and add 1.5 cups of water and bring it to a boil
  4. Once the mixture starts boiling well, add in the cooked ash gourd and cook for another mins.
  5. Meanwhile take curd in a mixing bowl and add in the gram flour to it and beat the mixture well so that there are no lumps of the flour
  6. Now add in this curd mixture into the boiling gravy and mix well and simmer it to bring to a boil
  7. Add in fresh curry leaves and switch of the stove
  8. Prepare the tempering by heating oil in a skillet and adding the ingredients given under Tempering
  9. Serve this delicious Besan Kadi with hot Rice

Ingredients:

For the Paste:
