Here I go with another stuffed vegetable recipe. I have a special reservation towards stuffed vegetable recipes. I make Stuffed Brinjal regularly. I make Bharwa Bhendi Masala and stuffed Bitter gourd not so frequently as it takes more time. Vegetables like Brinjal and Okra (Bhindi) are the two veggies which I like a lot and I have observed everyone has their own style of cooking these two veggies be it just a fry or stuffing recipe. Stuffing the masala inside the vegetable gives quite a different taste. And again we can try out different stuffing. The most common filling is Gram flour mixed with chilli powder and other spice powders which goes well in almost all the vegetables. But for this Bharwa bhindi masala I have come out with a different masala stuffing using Sambar Powder.

Just like my other stuffed recipes, even in this Bharwa Bhindi Masala, i have included the bhindi seeds into stuffing masala for a different taste. Do try out this recipe with tender and short length bhindis.

Ingredients
  1. Tender and Fresh Bhindi: 300 Gms
  2. Sambar Powder: 3 tbsp.
  3. Roasted Peanut powder: 2 tbsp.
  4. Besan (Gram flour): 1 tbsp.
  5. Amchoor Powder: ½ tbsp.
  6. Chilli powder: 1.5 tbsp.
  7. Chopped fresh coriander: 1/3 cup
  8. Salt: To taste
  9. Oil: 2 tbsp.
Instructions
  1. Wash the Bhindi/Okra wipe dry. Trim the edges on both side and make a slit all over the length to cut open, keeping the bhindi intact.
  2. Gently pull out the seeds and keep them aside to mix it in the stuffing masala.
  3. In a mixing bowl add in all the powders, Salt, chopped coriander add few drops of oil and make into a sand texture
  4. Now carefully stuff this masala into the prepared Bhindi and gently press them to keep in tact
  5. Transfer them into a microwave safe bowl and roast them for 3-4 mins for the first time and then for another 3 mins for the second time.
  6. Now add few drops of oil mix well and again microwave for another 3-4 mins for 2 to 3 times until the bhindi start changing the colour.
  7. Heat remaining oil in a pan and then transfer the cooked bhindi and cook until done. The Bhindi will turn crisp.
  8. Transfer it into a serving bowl and serve with hot rice
Notes
  1. By cooking half way in the microwave not only reduces the oil consumption but also helps in attaining the crispy texture to the bhindi
  2. You can cook completely in microwave or on stop.
