Brinjal Baby Corn Rice

Seriously I had no intentions of making this at all… Its just that left over rice leads me to prepare such Rice items. I absolutely loved it. Brinjal Baby corn rice was just an experiment (Trust me J) and it turned out well. What else is left out then? Straight included this recipe in my lunch box menu.

Brinjal Baby Corn rice doesn’t take much time if you already have some cooked rice aside. I use Oven to save time and reduce oil consumption. For Brinjal Baby Corn Rice I used to oven to soften the vegetables, followed by adding spices in the pan and then mix the whole lot with rice. That’s it simple and tasty. I did not add much of masalas to this as eating more of masalas in working hours is not good and leads to digestion problems.

Let us go through the ingredients of Method of preparing Brinjal Baby Corn Rice

Ingredients :

Cooked Rice : 1 Cup

Brinjals : 2

Baby Corn : 4-5 (I used left over one J)

Oil : 1 tsp

Chilli Powder : 1 tsp

Amchoor Powder (Dry Mango Powder) : ½ tsp (optional)

Salt to taste

Cumin Seeds : ½ tsp

Method :

  • Fry Baby Corn Pieces and Brinjal Pieces separately in oven with few drops of oil until they are soft
  • Heat Oil In a pan and add cumin seeds to splutter
  • Now add both brinjal and baby corn and fry for 4-5 mins
  • Add Salt, Chilli Powder and Dry Mango Powder , mix well and fry for another 2-3 mins
  • Now add the cooked rice, mix well and simmer it 4-5 mins
  • Brinjal Baby Corn Rice is ready.

  • Serve hot with Raitha and Papads.
