Butter Murukku

Butter Murukku is prepared by mixing Gram Flour and rice flour in defined Quantities and then mixed with butter and spices and fried in oil.

Diwali has come. Time for sweets, snacks, crackers, fun and what not? Diwali season is always busy for elders, youth and kids. Elders busy in buying clothes, preparing sweets, savouries at home. Youngsters roam around to buy the best set of crackers that include 1000 Wala, 2000 wala… OMG so noisy. Kids running around tasting snacks, bursting crackers running on the streets with neighbourhood kids. All in all a very energetic day for everyone.

Preparation on Snacks and sweets is mainly seen on two festivals. One is Krishna Jayanthi and then Diwali. I personally prepare limited number of snacks on both the occasions as they consume too much of oil and fat. The standard snacks that are prepared on Diwali in my house are “Butter Murukku” and “ Sev”

I never involved in preparing Butter Murukkus’s before marriage. After Marriage when I tried preparing them for the first time, to my surprise they were perfectly round and nice. Everybody were surprised when I told that I had prepared Butter Murukku’s for the first time.

The presser or machine what we use to prepare these snacks are very interesting. There are many Varieties Available. I just love the machine concepts incorporated in Kitchen Gadgets, especially the Indian Ones. Be it pressure cooker, Chakli Maker, Vada Maker and many more. They are so nice to see.

Coming to the Murukku making machine, as I said earlier there are many varieties. The old version is the one which needs pressure to be applied on both side. Now a days we get better variety of this machine where we need to exert less force for making the murukku. Whatever be the design, we get 4-5 varieties of design plates which is put at the bottom of the presser. The dough takes the shape of the design on the plate when pressed. For making Butter Murukku we use the start shaped design plate to get the thorn like sharp edges on the murukku. Take a look at the pic below

Ingredients
  1. Rice Flour – 2 Cups
  2. Gram Flour – 1 Cup
  3. Cumin Seeds -1 tbsp.
  4. Carom Seeds (Ajwain) – 1 tbsp.
  5. Chilli Powder – 1.5 tbsp.
  6. Turmeric Powder – ¼ spoon
  7. Asafoetida – ¼ spoon
  8. Salt – As per taste
  9. Butter – 2 tbsp.
  10. Oil – for Frying
  11. Hot Water – To make stiff dough
Instructions
  1. Take a big mixing bowl and pour in measured quantities of Rice Flour and Gram Flour. Alternatively instead of using Gram Flour, we can use fried gram powder.
  2. Add in Cumin Seeds, Carom Seeds, Turmeric Powder, Asafoetida, Chilli Powder, Salt and mix well
  3. Add in butter and mix it well so that the whole mixture resembles the Semolina texture without any lumps
  4. Take a small quantity of this mixture and add in hot water, mix well and make a stiff dough
  5. Load this dough into the Murukku Presser with the star shaped design plate at the bottom
  6. Heat oil in a deep bottomed pan/kadai
  7. While the oil is getting hotter, grease some polythene sheets with few drops of oil and gently press the murukku presser. Start spreading the dough coming out in a circular shape to the desired size
  8. Once the oil is hot, gently drop the prepared Murukku’s and fry until golden
  9. Repeat this for the next set of Butter Murukku’s
Notes
  1. You can replace Gram Flour with a fine powder of Fried Gram, for a different taste and softy texture
  2. Do not make a dough with the whole mixture at once. Take it part by part and then mix it water. If the whole dough is prepared at a time, the next set of murukku’s breaks up when being fried in the oil.
  3. Make sure the water is medium hot. Do not make the dough with cold water to avoid breaking of murukkus
  4. Before loading the prepared dough in to the presser, dip the end of the dough which goes to the bottom of the presser in hot oil, to avoid sticking of the dough to the walls of the presser
