There used to be pooja in my house on every Saturday and we use to break coconut in that day as an offering to God. So we use to have fresh coconut to prepare this chutney. Those were the days when refrigerator was still considered as a luxury requirement. Now we freeze the coconut as it is, or chopped and even grated.

Generally I chop the coconut into small pieces and then freeze. I grate it in a food processor as and when required. This way we can store the coconut for longer period of time.

Coconut Chutney prepared for dosa is usually less spicy and since we don’t add much of ingredients, it cannot be stored for more than day unless refrigerated.

But this version of coconut chutney which I am going to narrate now contains tamarind which acts like a preservative and hence can be stored for more than a day. But it is always better to refrigerate it.
