Coriander Rice- An easy and perfect Lunch Box recipe. I just tried this recipe casually with minimum ingredients and it turned yummy. There is no need to run around for ingredients. I prepared this with all the left overs J

Let us see how to prepare coriander rice


Fresh Coriander  Chopped : 1 Cup

Green Chillies : 4-5

Ginger : A very small Piece

Jeera Powder (Cumin Powder) : 1 Spoon

Dhania (Coriander) Powder : 1 Spoon

Amchoor Powder (Dry Mango Powder) : 1 Spoon

Chilli powder : ½ Spoon

Haldi (Turmeric) – A pinch

Salt : To Taste

For Tempering

Oil : I tsp.

Black Gram : 1 spoon

Mustard and cumin seeds : 1 Spoon each

Asafoetida : a pinch

Curry Leaves : A few

Cooked Rice : 2 Cups

Method :

  • Add Coriander,chillies,ginger into a processor and blend it to a smooth paste. Strain out excess water if any. You can add this strained water in other dishes for coriander flavour
  • Heat oil in a pan and add black gram followed by mustard and cumin seeds when oil is hot
  • Add Asafoetida, turmeric and curry leaves
  • Now add the coriander paste and fry until the raw smell goes off
  • Add all the spice powders and fry for 2 mins
  • Now add the cooked rice, mix well and simmer for 3-4 mins
  • Serve hot with any raitha of your choice.
