Dahi Baingan

This is my version of Odisha’s Dhoi Baingan. I just love this recipe. Ate this long time back in a small hotel which was managed by people from Odisha. I keep pestering my friend to get this for me. Today I had some very less brinjals left so thought why not try this recipe. It’s as simple as any other raitha.

Ingredients:

Brinjals : 4-5

Green Chillies : 4-5

Curry Leaves : A few

Cumin Seeds (Jeera) : ½ tsp

Curd : 1.5 cups

Salt :  to taste

Oil : 1 tsp

Asafoetida : A pinch

Method :

  • Cut brinjal into medium sized chunks
  • Heat oil in pan and then add cumin seeds to splutter
  • Now add Curry leaves and asafoetida and fry for a min
  • Add green chillies and fry for another minute. This time I have just made a slit to the lengthy greed chillies and fried them. You can add then in finely chopped form also.
  • Add brinjal and fry until soft.
  • Switch off the stove and then allow the mixture to cool
  • Once cooled add salt and curd and mix well.
  • Dahi Baingan is ready to serve.

Oriyan Version of Dahi Baingan
Ingredients
  • Brinjals : 4-5

Instructions
