Until recent times Gobi Paratha Recipe, is one such dish which I was not so enthusiastic to make. I was more partial towards Mooli paratha’s. I started liking only when it was made available in my office Cafeteria. Unlike hotels and restaurants, that guy generously fills the cauliflower masala into the parathas that I relish every bite of it. After eating it a couple of times there, I decided to make it at home one day.

Ingredients
  1. Medium Sized Gobi (Cauliflower) : 1
  2. Green Chillies: 5-6 finely sliced or coarsely grinded
  3. Roasted Cumin (Jeera) Powder: ½ tbsp.
  4. Roasted Coriander (Dhania) Powder: ½ tbsp.
  5. Dry Mango (Amchoor) Powder: 3/4th tbsp.
  6. Chilli Powder: 1/4th tbsp.
  7. Finely Chopped Fresh Coriander: ½ cup
  8. Salt: As per Taste
  9. Turmeric Powder: A pinch
  10. Wheat Flour: 3 Cups
  11. Oil: To Fry
  12. Cumin Seeds: 1 Spoon.
  13. Water: Sufficient enough to make dough.
Instructions
  1. Boil 3 cups of water and gently drop the cauliflower florets and boil for 3-4 mins. This is to ensure thorough cleaning of Cauliflower.
  2. Drain the water and dry up the florets and grate them.
  3. Take a mixing bowl and add in the wheat flour. To this flour add in water to make stiff dough just like how we make for chapathis.
  4. Cover the dough with a damp cloth and set it aside to rest for 20-30 minutes.
  5. Heat oil in a pan and add in cumin seeds once hot.
  6. Add in minced green chillies and fry for a minute or two
  7. Add in the prepared Cauliflower and fry well until they start changing the colour
  8. Now add in salt and all the powders and mix well and simmer for 2-3 mins
  9. Switch off the stove and sprinkle chopped coriander and mix well. Allow it to cool
  10. Now divide the prepared dough into 8-9 equal sized balls.
  11. Now in the same manner divide the prepared Cauliflower masala mixture into 8-9 equal sized balls.
  12. Take one portion of dough, flatten it a bit with rolling pin and then place the masala at the centre.
  13. Carefully seal it, by folding all the sides and make it to a circular shape.
  14. Sprinkle some wheat flour on both sides and gently roll it with rolling pin until the paratha of desired thickness is attained.
  15. Heat a Non Stick Tawa and once hot, gently put on the prepared paratha and drizzle few drops of oil.
  16. After 2-3 mins, flip the paratha and fry it until it turns brown.
  17. Repeat the process for the next set of parathas.
  18. Serve hot with curd and pickle.
