Kandattu

I have often seen people eating Egg omelet with hot rice. A thought used to come in mind “Is there no such option for pure vegetarians?” My mom had the perfect reply for that. kandattu or Elephant Foot Yam Dosa. Just enjoy this crispy, yet melting dosa along with hot rice and a dollop of ghee in the first serving.

Elephant Foot Yam Pancakes

Ingredients

  1. Elephant foot Yam (Suvarnagadde in Kannada, Kanda Gadda in Telugu, Chenai in Tamil, Suran in Marathi): 250 gms
  2. Onions – 2 Medium Sized
  3. Green Chillies-7-8
  4. Ginger-2 inch chopped into pieces
  5. Cumin seeds-1 tbsp
  6. Rice flour-2 cups
  7. Salt – To taste
  8. Oil- To fry the dosas

Method

Grind Yam, Green Chillies, Ginger, along with salt adding little water into a thick yet to some extent, a fine paste. It tastes great if small chunks of Yam are left out here and there. Take this mixture in a mixing bowl and add finely chopped onions, Cumin seeds and rice flour and mix well. Now add sufficient water to get the consistency of a batter.

Heat a frying pan on stove and add little oil on the pan. Now pour the batter on the pan and spread it like a dosa, take care that it is medium size and thin around the edges.

Pour oil on the sides and fry the dosa well.  Once one side is fried well, flip the dosa and fry the other side as well.

Elephant Foot Yam Pancakes

Once the dosa is fried well serve it. The dosa tastes best when it is served hot, and serves a good accompaniment to rice, added with a dollop of ghee.

Tips

Usually while cooking Yam, tamarind or something sour is used to beat the itchy sensation that the vegetable gives at times. However, because we are frying the yam well, this recipe does not need tamarind or anything sour.

  5. Now pour the batter on tawa and spread it like a dosa, take care that it is medium size and thin at the edges.
  6. Pour oil so as to fry the dosa well
  7. Flip the dosa on the other side to fry
  8. Serve Hot with Hot rice and ghee.
