Rice with a sour taste is always a welcome for me. They can be Lemon Rice, Tamarind Rice, Mango Rice or any other variety of rice with a dash of lemon in it. They are very tasty and make a satisfying meal. While at home serve it with papads or sun dried Vadiums. They make a very good combination.

Lemon Rice is eaten in any course of meal. In Bangalore it is served even as breakfast in fast food points and road side eat outs. They give a plateful of hot lemon Rice and a masala vada with some chutney. Unlike Tamarind Rice where extracted tamarind pulp has to be boiled, or mango rice where we need to sauté the grated raw mango, lemon rice does not involve that much of effort. It’s very very simple.

Ingredients
  1. Rice: 1 Cup, 3 Cups if Cooked Rice is used.
  2. Peanuts: ¼ cup
  3. Slit Green Chillies: 3 to 4
  4. Salt: To taste
  5. Lemon: 1
For Tempering
  1. Oil – 1.5 tbsp.
  2. Chana Dal (Bengal Gram) : 1 spoon
  3. Mustard and cumin seeds : 1 Spoon each
  4. Turmeric and Asafoetida : ¼ spoon each
  5. Red Chillies (Optional) : 1 or 2
  6. Curry Leaves : Few
Instructions
  1. Cook rice and spread it on a large plate to cool. The cooked rice should not be soft and should be grainy in texture
  2. Heat oil in a pan and once hot add in the peanuts and fry them until it turns slightly red
  3. Remove the fried peanuts and pour them onto to the spread rice
  4. In the same oil add in Chana dal and fry for a min.
  5. Now add in Mustard and cumin seeds to splutter.
  6. Add in Turmeric and asafoetida followed by red chillies and curry leaves.
  7. Now in goes the slit green Chillies and fry them until they half done
  8. Add the cooked rice along with fried peanuts and salt and mix well.
  9. Simmer this rice for few minutes until the entire rice becomes hot
  10. Switch off the stove and add in lemon juice and mix well
  11. Hot and Sour Lemon Rice is ready to be served or to pack for the box 
Notes
  1. Not just preparing a plain Lemon Rice , there can be some variations done to slightly alter the taste like
  2. 1) In the tempering add in the sliced onions and fry them until soft before adding the rice.
  3. 2) After squeezing in the lemon juice and when the rice cools down a bit add a spoon or two of mustard powder and mix well. This brings a mild bitter taste which sets well with the sour rice
