We are through the winter season and slowly heading up towards summer. Arrival of summer seasons means pickles season has come. This is because we can sun dry all the ingredients to remove the excess moisture which helps the pickle to last long.

India is a land of pickles and every family takes pride in their method of pickle preparation. We only know certain varieties of pickles which are available throughout the country. But there are many many pickles which we haven’t even heard about. Mamidikaya Mukkala Pachadi – Raw Cut Mango Pickle is one such pickle which is quite famous in Andhra Region. People buy Raw Mangoes in lot and prepare a variety of pickles. One may not be surprised to hear that more than 25 varieties of mango pickles come from this region.

I have taken the pictures of Mamidikaya Mukkala Pachadi – Raw Cut Mango Pickle last year when I prepared it for the first time. I had not even started my blog by then J. But I had a serious passion to prepare pickles.

Ingredients
  1. Sour Raw Mangoes: 3-4
  2. Mustard Powder: 1.5 tbsp.
  3. Fenugreek (Methi) Powder: 1 tbsp
  4. Chilli Powder: 4 tbsp
  5. Salt: As per Taste
  6. Turmeric Powder: ½ tsp.
  7. Oil – 8-9 tbsp.
  8. Asafoetida: ½ tsp.
  9. Mustard and Cumin seeds: 1.5 spoons each
  10. Red Chillies: 5-6
Instructions
  1. Wash the mangoes and pat dry. Now peel the skin of the mangoes and cut them into small pieces.
  2. Add Salt and Turmeric to the cut mango pieces and sun dry them until evening.
  3. Take a large mixing bowl and add in Mustard, Fenugreek, and Chilli Powder along with salt and mix well.
  4. Now in a stone Mortar and pestle, take small quantities of Marinated Mango pieces and add 2-3 spoons of prepared spice powder and crush them coarsely.
  5. Take this mixture out in another mixing bowl
  6. Repeat this process in batches until you completely crush the mango with the powder prepared.
  7. Mix this pickle well and keep it aside.
  8. Heat a pan and pour oil and once hot add in mustard and cumin seeds to splutter followed by adding Asafoetida and Red Chillies.
  9. Add this seasoning to the pickle and mix well.
  10. Once the pickle is cooled store it in an airtight container.
Notes
  1. Dry Roast mustard and Fenugreek seeds and grind them to a find powder separately, to add into this pickle.
  2. After 3 days check for Salt, Spice level and Oil. If salt is less add some more and mix well.
  3. If oil is less heat some oil, add it to the pickle and mix well

Step by Step preparation of Mamidikaya Mukkala Pachadi
