Woo Hoo!!!! Mooli Paratha Recipe is the first Indian bread Recipe on my blog and I am so excited. I have few more lined up. But let me start off with something which was extremely successful in the first attempt itself.

When I visited my sister’s house I made Mooli Paratha accompanied by Raw Mango Masala. This Mooli Paratha Recipe is one such recipe which my husband often asks to prepare. It is one of my personal favourite too.  It’s simple though its time consuming. It is little bit complicated when compared to Aloo paratha, because radish doesn’t have the binding quality which potato has. Don’t worry in this post I will tell you an easy process of how to get over the challenge.

Plan to prepare this Mooli Paratha Recipe over a weekend so that entire family can have a sumptuous meal together. Since we add some masalas into this, there is no need of extra vegetable or any sought of curry. Serve it with curd/yog hurt and some pickle.

Ingredients
  1. White Radish (Mooli): 3-4 Big Sized
  2. Green Chillies: 5-6 finely sliced or coarsely grinded
  3. Roasted Cumin (Jeera) Powder: ½ tbsp.
  4. Roasted Coriander (Dhania) Powder: ½ tbsp.
  5. Dry Mango (Amchoor) Powder: 3/4th tbsp.
  6. Chilli Powder: 1/4th tbsp.
  7. Finely Chopped Fresh Coriander: ½ cup
  8. Salt: As per Taste
  9. Turmeric Powder: A pinch
  10. Wheat Flour: 3 Cups
  11. Oil: To Fry
  12. Cumin Seeds: 1 Spoon
  13. Water: Sufficient enough to make dough
Instructions
  1. Peel the skin of the radish, grate them, sprinkle salt and turmeric powder, mix well and set aside for 10 mins.
  2. Now squeeze out the water out of radish well until they look nicely dry
  3. Do not throw the squeezed out water. We can use it making dough for extra flavour and taste.
  4. In the meantime take a mixing bowl and add in the wheat flour. To this flour add in the water squeezed out of radish and additional water if required to make stiff dough just like how we make for chapathis.
  5. Cover the dough with a damp cloth and set it aside to rest for 20-30 minutes.
  6. Heat oil in a pan and add in cumin seeds once hot.
  7. Add in minced green chillies and fry for a minute or two
  8. Add in the prepared radish and fry well until they start changing the colour
  9. Now add in salt and all the powders and mix well and simmer for 2-3 mins
  10. Switch off the stove and sprinkle chopped coriander and mix well. Allow it to cool
  11. Now divide the prepared dough into 8-9 equal sized balls.
  12. Now in the same manner divide the prepared radish masala mixture into 8-9 equal sized balls.
  13. Take one portion of dough, flatten it a bit with rolling pin and then place the masala at the centre.
  14. Carefully seal it, by folding all the sides and make it to a circular shape.
  15. Sprinkle some wheat flour on both sides and gently roll it with rolling pin until the paratha of desired thickness is attained.
  16. Heat a Non Stick Tawa and once hot, gently put on the prepared paratha and drizzle few drops of oil.
  17. After 2-3 mins, flip the paratha and fry it until it turns brown.
  18. Repeat the process for the next set of parathas.
  19. Serve hot with curd and pickle.
Notes
  1. Roll the parathas gently by applying less pressure as the radish is soft enough to come out.
  2. For ease of rolling using wheat flour well for dusting purpose.
