Lunch Box Recipes are always quite experimental and fun to prepare. After all “Necessity is the Mother of Invention” right? What to do when we run out of onions, potatoes, tomatoes etc.? We plan to prepare something with veggies we have. That’s how I prepared this Okra Rice

Okra/Bhendi is one of my favourite vegetables. It always fascinates me the myth that eating lot of okra will help us to improve our “Math” knowledge. Is it true? Well who cares as long as we are getting some tasty recipes out of OkraJ.

I was always interested in making Okra Rice. I prepared this Okra Rice when I had less number of Okras at home. It’s a must try lunch box recipe.

Ingredients:

Rice- 1 cup

Fresh Tender Okra – 250gms

Onion – 2 Medium Sized

Tamarind Pulp – 1 tbsp.

Chilli Powder – 1 spoon or as per taste

Pepper Powder-1/2 spoon

Broken Cashews -1 spoon

Salt- To taste

Oil-2 tbsp.

Mustard and cumin seeds – ½ spoon each

Turmeric Powder (Haldi) –A Pinch

Method:

Cook Rice and keep aside

Heat ½ spoon oil and slightly fry broken cashews

Wash the Okra and pat them dry

Slice the Okra and keep them aside

Heat Oil in a pan and once add in mustard and cumin seeds to splutter and then add turmeric powder

Now add in the Okra slice and fry for 2 to 3 minutes

Add in chopped onions and fry until both okra and bhendi are 75% done

Now add in the tamarind pulp, chilli powder, pepper powder and fry until the veggies are done

Now add in the cooked rice and mix well until the masala is well quoted to the rice

Switch off the stove and top the rice with fried cashews

Serve it hot with Raitha and Papad or pack it for the lunch box.
