One pot Potato Curry-Simple and Tasty

Well who doesn’t love potatoes? What if our favorite potatoes are cooked along with tomato in its own juices? Awesome isn’t it?One pot potato curry is one such kind. And it’s so easy to prepare

. Now a days OPOS (One pot One Shot) recipes are gaining lot of importance because of time constraints. This instant recipe can be included in your OPOS menu without any doubt. Add in few drumstick pieces if you have it stocked, else just potatoes and tomato is sufficient for this One pot Potato Curry. Refer following links for more recipes of potatoes. Now let us see how to make One Pot Potato Curry

Here we go with the ingedients and preparation

Ingredients :

Medium Sized Potatoes : 2

Tomato : 2 Medium Sized

Drumstick pieces : 7-8 (Optional)

Chilly Powder : 1 Tbsp

Grated Jaggery : ½ spoon [Optional if you have a mild sweet tooth like me J]

Salt : As per Taste

Water : 1 Cup

For tempering :

Oil : 1.5 tsp.

Mustard and cumin seeds : ½ spoon each

Curry Leaves : Few

Turmeric Powder : A pinch

Method :

  • Dice the potatoes and tomatoes into medium sized cubes and keep aside
  • Place a pressure plan on the stove and add oil
  • Add in mustard and cumin seeds into the hot oil and allow them to splutter.
  • Add in Turmeric powder and curry leaves and fry for few seconds
  • Now in goes the potatoes, tomatoes and drum stick pieces along with salt, chili powder and Jaggery
  • Add water and close the lid and pressure cook for 3 whistles.
  • Switch off the stove and set it aside.
  • Once the pressure is off open the cooker lid and give it a nice stir.
  • Check for desired the consistency. If required add in some more water and bring to a boil
  • Simmer it for few more mins. One Pot Potato Curry is ready to be served.
  • This goes very well with Roti and Phulka and also tasted very good with Plain and Curd rice.
