Pumpkin Raitha

Raitha is an excellent side dish for lunch and dinner. They are easy to prepare. I personally like it a lot. I make raithas with many vegetables and sometimes even greens. That’s the reason for having a separate page for raithas J. I hope that I would publish many more raitha recipes here.

Pumpkin Raitha is a simple raitha made out of Red Pumpkin. I usually make it when I have a small piece of pumpkin left out.

Well for a simple recipe let me not bore my readers with too much of description here. So let’s get into the method of making Pumpkin Raitha

Pumpkin raitha

Ingredients:

Red Pumpkin: A small piece

Green Chilly: 1 (optional, if you prefer some spicy taste)

Roasted Peanut Powder: 1.5 tbsp.

Curd: ½ cup

Salt: As per Taste

Oil: 1 tsp.

Cumin Seeds: 1 spoon

Asafoetida, Turmeric Powder: A pinch

Method:

    • Remove the skin of the Red Pumpkin and dice it into small cubes
    • Boil it adding some water either on stove top, or microwave or in a pressure cooker
    • Drain out the excess water and mash it. Its ok if there are small chunks of pumpkin here and there
    • Heat oil in a pan and add cumin seeds to splutter
    • Add Asafoetida and turmeric powder
    • If you are adding green chilly add them sliced at this stage and fry for few seconds
    • Now add the mashed pumpkin, salt and mix well and fry for two mins
    • Switch off the stove and add roasted peanut powder and set it aside to cool
    • Once cooled add curd, mix well and serve. Isn’t it simple??? J
    • Serve with along with any vegetable and rice either during lunch or dinnet

Notes :

  • Add the curd only when the mixture is cooled.
  • You can even add some curry leaves and Black Gram into the tempering.
