Pure coconut milk is used in many cuisines, notable ones being Thai Cuisine and in India all the coastal cuisines like Kerala and Goa. It has gained a good popularity with the growing veganism. It tastes awesome when used in making Thai and many Indian Curries and soups. I have made this coconut milk at home when I made Kerala Style Vegetable Stew which is obviously going to be my next post.

Coconut Milk has many benefits like lowering cholesterol levels, improving the blood pressure and thereby preventing many prolonged ailments. It is rich in fibre, vitamins and minerals. It aids in stronger bones and provides essential strengthening ingredients to the body.

While we get coconut milk from renowned brands in tetra packs, coconut milk powder is also available in big packs and small sachets for one time use. Go for these options only when there is no time and coconut not being available at home.

Pure coconut milk is used in two forms while cooking. One is thick coconut milk and the other is thin coconut milk. In simple terms the first extract which is thicker is the thick one and the following extracts are the thinner one. Thick milk is used at the end of the preparation to thicken the curry or soup while the thinner version is used while cooking.

Ingredients
  1. Fresh Grated coconut: Grated from bigger half portion of Coconut.
  2. Water: 2 cups
Instructions
  1. Load the mixer jar with the grated coconut and add 1/3 cup of water and grind it for few seconds.
  2. Transfer this mixture into a filter with very small perforations and gently press it with the back of the spoon.
  3. Collect the extract in a bowl and keep it aside. Do not discard the residue.
  4. This first extract is the thick coconut milk.
  5. Now transfer the residue into the mixer jar again and now add ½ cup of water and again grind for few more seconds.
  6. Filter the contents in the same way and collect the extract in another bowl separately without mixing it with the first extract.
  7. The second extract is the thin coconut milk.
  8. Repeat this process of grinding the coconut residue with water for 1 or 2 times again and collect the extract in the same second bowl.
  9. Now both thicker and thinner forms of pure coconut milk are ready for cooking.

Step by Step Preparation of Pure Coconut Milk with pictures
