Carrots !!! An attractive vegetables which most of us wouldn’t deny to eat. Carotene contained carrots are not only attractive because of color but also the taste. It rules the taste of salad when it goes in. I add carrots both is diced and shredded forms while making salads. Be it a simple salad with other vegetables mixed or a South Indian style Kosambri in which shredded carrots are added along with Moong dal and some lemon juice.

Some of us would not a poriyal/sabji made out of carrots because of its sweet taste especially the dry curries. My husband does not like any sabji that is sweet in taste. Though he eats carrots in raw he does not appreciate any sabji out of it. He eats without complaining but I can make out from his expressions that he is struggling to eat it ;). But I did not want to give up my try and hence tried this spicy version of carrot fry. I make it spicy by adding slit green chillies and hence the flavors change. Now he doesn’t have any issues in eating carrots in cooked form J. Uff I am relieved.

Spicy Carrot Stir Fry is a recipe in which grated Carrots are cooked on a low Flame adding Freshly Ground Pepper. The Coriander and pepper added gives a very good Aroma for this recipe

It’s a very easy to make dish and takes lesser preparation time. The only time goes in shredding the carrots.

Lets get into the recipe right away.

Grated Carrot cooked on a low flame adding Fresh Ground Pepper

Ingredients:

· Carrots : 2 Big sized

· Green chillies : 4

· Corriander leaves : ½ cup chopped.

· Curry leaves : A few

· Pepper Powder : ½ table spoon

· Salt : To taste

· Oil : 1.5 tsp

· Mustard,Cumin,haldi,hing – for tempering

Method:

· Peel the skin of the carrots and shred them

Grated Carrot cooked on a low flame adding Fresh Ground Pepper

· Slit the green chillies length wise. If they are long enough, cut them into half and then slit them

· Heat oil in a pan and add the tempering ingredients.

· Add curry leaves and fry for few seconds

· Now add the green chillies and fry for a min untill outer skin of the chillies start turning into white

· Now add the shredded the carrots, mix well and cook on low fame.

· When the carrots are cooked 75% added the chopped coriander and fry for another 2-3mins.

· Finally add salt and pepper powder , mix well and then simmer it for another 2-3 mins. Spicy Carrot stir fry is ready to be served with hot rice or Roti.
