Stuffed bitter gourd -andhra style

Stuffed bitter gourd andhra style is a tasty bitter gourd dish in which bitter gourd is stuffed with masala made up of peanuts and other spices

Peanuts are widely used in the place where I was born(Rayalaseema-Andhra Pradesh) and it is also the primary crop of the farmers. The meal is as simple as jawari roti and peanut chutney.

Stuffed Bittergourd

Peanut stuffing is quite common there and is mixed with other spices to prepare subji’s out of okra,brinjal,bitter gourd etc. This is one such recipe my mom makes. Needless to say that stuffed veggies need generous amount of oil. Now to avoid excess oil usage, let us check out the MW version of Stuffed Bitter gourd. Here we go!!!!

 

Ingredients

Bitter Gourd : 250 gms (Lucky you are if you get the small and tiny ones)
Roasted and Coarsely ground Peanut Powder : 3-4 tsp
Onions : 2 Small sized and finely chopped
Besan :3tsp
Jeera powder, dhaniya powder: 1 tbsp each
Amchur powder : 1.5 tbsp
Chilly powder: 2 tsp
Salt-to taste

Method

 

Wash and slit the ends of bitter gourd.
Slightly peel the outer skin so that it reduces the bitterness of the karelas and also helps in quick frying.

Make a cut in the middle (not complete length of the karela, just enough to stuff the masala) and scoop out the seeds if possible.
Now do not throw away these seeds keep them aside (this is the actual twist and adds up to the taste)

You can boil the bitter gourds adding little salt and turmeric powder until they are 75 % cooked

In a mixing bowl add chopped onions, and other powders mentioned above along with the scooped karela seeds and mix well. You can add few drops of oil if you wish to.

Kakarakaya Palli Karam - Bitter gourd or Karela stuffed with Peanut Masala

Now stuff this masala into the prepared bitter gourds.Place the stuffed Karelas carefully in a MW bowl, pour 1 spoon oil and mix well.

MW for 5  mins stirring  until they are slighlty done

Stuffed Bittergourd

Heat 1 tbsp of oil in a pan and add jeera and haldi
Now carefully add the karela into the pan and fry well .

If the masal is left out add some water and make a thick paste and pour this onto the bitter gourds

Fry well untill they are done.

Ingredients

  5. In a mixing bowl add chopped onions, and other powders mentioned above along with the scooped karela seeds and mix well. You can add few drops of oil if you wish to
  6. Now stuff this masala into the prepared bitter gourds
  7. Place the stuffed Karelas carefully in a MW bowl, pour 1 spoon oil and mix well
  8. MW for 10-12 mins stirring every 2-3 mins until they are 75% cooked
  9. Heat 1 tbsp of oil in a pan and add jeera and haldi
  10. Now carefully add the karela into the pan and fry well until crip
  11. Add a pinch of salt add the end over the karela’s and mix well
  12. If there is masala left over, you can add the masala at the end, fry well for 2-3 mins on low flame.
  13. Serve with hot rice and ghee.
