Tomato Onion Curry

Running out of vegetables at home? Or feeling lazy or tiresome cook? Do not want to spend more time in cooking?…. Ok then…. Here it goes. This quick and easy Tomato Onion Curry serves the purpose. It is not a rescuing recipe but also a “Want more” kind of one. My mom used to prepare this along with chapathi/roti when we travel. Its tangy taste serves as a very good combination for anything. Eat it dosa or chapathi or just rice…..

Let us see how to prepare this recipe…

Ingredients :

Ripe Tomatoes : 4 medium sized

Onions: 3 medium sized

Green Chillies : 2-3

Chilly Powder : 2 tsp

Jaggery : 1 tsp grated or sliced (You can adjust it according to your taste)

Salt : As per taste

Roasted Peanut powder : 3 tsp (optional- but tastes really good when added)

For Tempering :

Oil : 1.5 tsp

Chana Dal : 1 sp

Mustard/Cumin Seeds : 1 spoon each

Curry leaves : A few

Method :

  • Heat Oil in a pan and add chana dal
  • Now add mustard and jeera and allow them to splutter
  • Add curry leaves , followed with sliced green chillies and fry for a minute
  • Now add chopped onions and fry until half done
  • Now add chopped tomatoes and fry until soft. See to it that the curry doesn’t remain watery at this stage
  • Now add jaggery and mix well. Ensure the jaggery is fully melted before you the remaing ingredients
  • Now add all the powders, salt and mix well
  • Simmer it for another 3-4 mins and switch off the stove
  • Your Onion tomato curry is ready to serve

Tomato Onion Curry – A simple and easy to prepare dish which tastes great in all three course meals
Ingredients
