Vegan Red Thai Curry, my first complete Recipe from International Cuisine. Well though it’s from Thai Cuisine, the taste is very close to the Indian food. Now a days we get ready made Thai Curry Pastes in many grocery stores. I found them to be very good and time saving. Many a times use the Paste brought from stores, I rarely prepare the paste at home itself. However I am giving the Thai Curry Paste and Vegetable Stock Recipes also in this post.

Vegan Red Thai Curry – Vegetarian Thai Red Curry is one of our favourite food from international Cuisine. I first had it in one of Pan Asian Restaurants near to my place and I was really happy because of the Red Chilli flavour. Later on I prepare this recipe at home every now and then as it is my husband’s favourite. In a way I got introduced to Pan Asian and Middle East Food only because of him. Unlike other recipes Vegan Red Thai Curry – Vegetarian Thai Red Curry takes more preparation time. Since it involves making of Vegetable Stock and extraction of coconut milk. If you have preserved vegetable stock and ready-made Thai Red Curry Paste, then it can be prepared in a lesser time.

Ingredients
  1. For the Red Curry Paste
  2. Thai Red Chillies or Birds Eye Chillies: 2-3
  3. Garlic: 2-3 Pods
  4. Shallots: 2-3
  5. Coriander Seeds: 1 tsp.
  6. Cumin Seeds: 1 tbsp.
  7. Lemon Zest (Grated Yellow Peel of Lemon Skin): ½ tsp.
  8. Lemon Grass: 2 Sprigs
  9. Kaffir Lime Leaves: 2-3
  10. Galangal or Normal Ginger: ½ inch
  11. Coconut Milk: 2-3 tbsp.
  12. For Vegetable Stock
  13. Carrot: 1
  14. Onion: 1 medium sized chopped into 4 quarters
  15. Beans: 2
  16. Lemon Grass: 2 sprigs
  17. Cauliflower or Broccoli: 6-7 Florets
  18. Water: 2.5 Cups
  19. For Vegan Red Thai Curry
  20. Carrot Juliennes: ½ cup
  21. Onions: 1 Medium Sized Chopped into Slices
  22. Chopped Beans: ½ cup
  23. Capsicum Juliennes: ½ cup
  24. Cauliflower/Broccoli Florets: ½ cup
  25. Eggplant Cubes (optional): ½ cup
  26. Galangal or Normal ginger: ½ inch finely chopped
  27. Garlic Pods: 3-4 finely chopped
  28. Lemon Grass: 2 Sprigs
  29. Coconut Milk: ½ cup thick extract
  30. Sugar: 1 spoon
  31. Vinegar and Soya Sauce: 1 spoon each
  32. Vegetable Stock or Just water: 1 cup
  33. Salt: To Taste
  34. Oil: 2 tbsp.
Instructions
  1. For Thai Red Curry Paste
  2. Grind all the ingredients given for the Thai Red Curry Paste to make a coarse or fine paste out of it and keep it aside
  3. For Vegetable Stock
  4. Boil all the ingredients given for the vegetable stock on high flame until the volume is reduced to one cup. Strain it and keep it aside.
  5. For Vegan Red Thai Curry
  6. Heat Oil in a pan, add in Chopped Ginger and garlic along with lemon grass and fry for a minute or two.
  7. Add in Chopped onions and fry for 2-3 mins
  8. Now add in chopped vegetables and cook until they are 75% done.
  9. Add in the prepared Red Curry Paste, mix well and fry for 2-3 mins
  10. Now add in Sugar, Salt, Vinegar, Soya Sauce and vegetable stock, mix well and cook on low flame
  11. When it starts boiling, add in coconut milk and mix well
  12. Simmer for 5-6 mins
  13. Serve it with Thai Rice or any other variety of cooked rice.
Notes
  1. Just Plain water can be used instead of Vegetable Stock.
  2. Do not cook the curry for long after adding the coconut milk. Just simmer it for 5 mins.
  3. For Lemon Zest Grate only the Yellow Portion of the Skin. Avoid grating the Inner White layer as it tastes bitter.

Step By Explanation of Vegan Red Thai Curry- Vegetarian Thai Red Curry

For Thai Red Curry Paste

Grind all the ingredients given for the Thai Red Curry Paste to make a coarse or fine paste out of it and keep it aside

For Vegetable Stock

Boil all the ingredients given for the vegetable stock on high flame until the volume is reduced to one cup. Strain it and keep it aside. See the Picture given below.

Heat Oil in a pan, add in Chopped Ginger and garlic along with lemon grass and fry for a minute or two.

Add in Chopped onions and fry for 2-3 mins

Now add in chopped vegetables and cook until they are 75% done.

Add in the prepared Red Curry Paste, mix well and fry for 2-3 mins

Now add in Sugar, Salt, Vinegar, Soya Sauce and vegetable stock, mix well and cook on low flame

When it starts boiling, add in coconut milk and mix well

Simmer for 5-6 mins

Serve it with Thai Rice or any other variety of cooked rice.
