Kerala style cuisine is versatile and has lots of variety of recipes. From spicy to sweet, from vegetarian to non-vegetarian. Even the breads for that matter like appam, idiyappam etc . . . . And of course with a hint of coconut in everything.

The first dish that comes to my mind is Avial recipe. I like it so much that when I went to Wayanad for vacation I requested the resort manager to get avial done for the next day’s lunch. And I make it home every now and then.

Coming to this Vegetable Stew Kerala Style recipe, I ate it along with appam in cafeteria once. Yes my cafeteria is managed by some Kerala restaurant guy and hence we get many Kerala dishes. May be because requires some time in preparation and a bit of more coconut milk they have stopped making it. The taste depends on the coconut milk. Appam goes well with Avial, Kadala(Black chana)curry and this Vegetable Stew. But my vote goes for stew only. This can be made just by adding few diced potatoes also. And yes appam and vegetable stew Kerala style is my lunch menu for tomorrow being Sunday.

Ingredients
  1. Potatoes : 2 diced
  2. Onions : 2 sliced
  3. Green peas : ½ cup
  4. Beans : 7-8
  5. Green Chillies ; 3 sliced
  6. Ginger : ½ inch chopped into juliennes
  7. Garlic: 4-5 cloves chopped
  8. Cinnamon : 1 inch powder
  9. Pepper Powder : 1/3 spoon
  10. Thin Coconut milk: 1.5 cup
  11. Thick Coconut milk : 2/3 cup
  12. Water : ½ cup
  13. Oil: 1.5 tbsp.
  14. Cumin Seeds: 1 spoon
  15. Curry Leaves : Few
  16. Turmeric Powder: A pinch
  17. Salt: to taste
Instructions
  1. Heat oil in a vessel and once hot add in cumin seeds to splutter followed by turmeric powder and curry leaves
  2. Add in ginger juliennes and chopped garlic and fry for a minute
  3. Add in cinnamon and pepper powder and fry for few seconds
  4. Add green chillies and fry for another minute
  5. Add in chopped onions and fry until soft.
  6. Now add in chopped potatoes, beans, green peas and fry for 5 mins
  7. Add in water and cook for 5-7 mins
  8. Add in thin coconut milk and salt and bring it to boil
  9. Check if all the veggies are cooked.
  10. And then finally add thick coconut milk and mix well and simmer until it starts boiling
  11. Serve with appams
Notes
  1. You can slightly boil the veggies separately to quicken the cooking process
  2. Don’t boil it for a longer time after adding thick coconut milk.

Step by Step procedure with pictures to make vegetable Stew Kerala Style

Heat oil in a vessel and once hot add in cumin seeds to splutter followed by turmeric powder and curry leaves

Add in ginger juliennes and chopped garlic and fry for a minute

Add in cinnamon and pepper powder and fry for few seconds

Add in thin coconut milk and salt and bring it to boil
